Hot Cross Bun Pudding

We love Easter for many reasons, but one big reason we love it? Hot cross buns.

This is bit of a different way to enjoy them because, whilst we love them toasted well and topped with salty butter, sometimes it’s nice to mix it up. Here we’re turning them into a delicious pudding with chopped walnuts and chocolate chips. Definitely add this to your Easter weekend menu.

Prep: 15 minutes
Cook: 25 minutes

Method

  1. Preheat the oven to 180ºc.

  2. In a bowl combine the milk and lemon juice and leave to one side.

  3. Slice open the buns and butter them, if you like.

  4. Place the bottom halves of the buns in an ovenproof dish, and scatter over half of the crushed walnuts and half the dark chocolate chips.

  5. Put the tops of the buns back on.

  6. Add the cinnamon, vanilla paste, and maple syrup to the milk and lemon juice mixture.

  7. Whisk to combine, then pour this evenly over the buns.

  8. Top with the remaining crushed walnuts and dark chocolate chips. Place in the oven for 20 minutes until golden.

  9. Serve with a drizzle of nut butter. Enjoy!
