Sausage Rolls
Perfect for a party/picnic/weekend lunch/weekday packed lunch (delete as appropriate).
3 Ingredients (you probably already have in your cupboard) and about 20 minutes on the clock and you’ll have cookies on the table!
The riper the bananas here, the better as they'll be easier to mash and taste sweeter. Smooth almond also works better, but if crunchy is all you have then that's ok too. You can also swap this for peanut butter or even tahini, if you like.
Preheat oven to 180ºc and line a baking tray with parchment paper.
In a mixing bowl mash the bananas until there are no lumps, and then add the oats and almond butter.
Mix until well combined and then roll into 8 balls and place them on the baking tray.
Next gently flatten them into cookie shape and place the baking tray in the oven for 15 minutes.
Leave to cool slightly before eating. Enjoy!
